Burrito Bowl


   Try to think about a burrito. You probably picture a sort of wrap with tex-mex flavours. Something like that I suppose. ๐Ÿ’– Now it's time to get all of that deliciousness out of its pocket. In fact a Burrito Bowl, as its name suggests, features all the classical ingredients of a burrito arranged in a bowl instead of in a tortilla. Easy-peasy !
   
   We all love to have a great burrito sometimes, but let's face it : it is impossible ti eat a burrito without making a mess ๐Ÿ™ˆ ! We've all been there : some sauce dropping all around, some tomatoes falling at the end of the burrito, which is slowly openning, your tortilla is all soggy... All of that to taste all of those amazing flavors ! 
   I have the right solution for you : this amazing Burrito Bowl is mess free for sure ! You just need to take you fork and pick every bit of deliciousness one by one. The perfect way to eat a burrito satying classy. ๐Ÿ˜Ž

And you know what's best about this recipe ? It's entirely vegan ! Besides it's super healthy ! It's definitely a much funnier way to eat your veggies than a regular salad ๐Ÿ˜‰. It's deffinitely one of the easiest recipes of all times and it comes together in 5 minutes, that's it ! Super easy, super quick, super delicious : what's not to love ?

Alright enough talking, here you go:

Burrito Bowl  

Ingredients (for 2 bowls)

  • 2 Large handfull of fresh spinach
  • 2 Tomatoes (or around 10 cherry tomatoes)
  • A can (15oz) of black beans
  • Half a bell pepper (either red or yellow, or both !)
  • 2/3 cup of sweet corn (it's around half a can)
  • Half an avocado 
  • Store bought spicy salsa (obviously home made would be better...)
  • Salt and pepper to taste
  • If you like you can aslo add an onion, but I left it out sonce I'm not a big fan

Directions

   Rinse the tomatoes and chop them in small pieces. Take the beans out of the can and rinse them under running water. Repeat the same porcess for the corn. Wash the bell pepper, remove the seeds and roughly chop it in small pieces. Now time for the avocado : take the half avocado and cut it in half again, this way it's going to be easier to peel. Next, you can actually peel it and cut it in pieces. Wash the fresh spinach and, if you want, thinly chop the onion. 
   Place all of your prepared ingredients in 2 large bowls and season to your preference with salt and black pepper. For a final and spicy touch, add some salsa to your plate. Buen provecho !
